Summary of Research:
My research has been within infant and child nutrition, early growth and obesity. Later during my postdoc I focused on choice architecture. At the Vegetarian Society of Denmark I’ve specialised in plant-based nutrition. The Vegetarian Society of Denmark as well as Danish Center for a Plant-based & Organic Future are/have been involved in several research projects. Currently, we are a partner in an intervention study led by DTU Food, OnePlate, where 90 families will have health parameters tested after living according to the official dietary recommendations. We have also been involved in a pilot study regarding plant–based diet and rheumatoid arthritis, together with researchers at the hospital of Glostrup and the Capital Region. Other research projects have been centred around market potentials and behavioural insights to create tipping points towards plant-based diets.

Sept 2020 – current
Head of Danish Center for a Plant-Based & Organic Future – a partnership between the Vegetarian Society of Denmark and Organic Denmark. Coordination of projects across the two organisations to ensure a high degree of synergy between the projects. Broad network surface with the food industry, organisations and research organisations in general. Specialised in project activities concerning nudging, nutrition and food service.

Sept 2018 – sept 2020
Nutritionist and project manager for business and organics in the Vegetarian Society of Denmark.

May 2017 – July 2018
Research Associate at the University of Cambridge, Center for Diet and Physical Activity. Public health and epidemiology. Major evaluation of the type of food items at checkout areas in supermarkets with and without policies on healthier snacks in their check-outs. Effect on purchases over time for these types of products using purchase data.

Nov. 2016 – Febr. 2017
Postdoc at the Food Institute, DTU in Denmark. Diet methodology. Reporting results, fundraising, and responsible for preparing a validation study with 3×24 hour diet interviews against 7-day diet diaries using doubly labelled water and biomarkers.

Jan. 2016 – Oct. 2016
Nutrition specialist at Egelund Castle. Active part of the kitchen team with a focus on healthy cooking and initiatives that could promote healthier choices among the guests while they were at the meeting. Nutrition education for the chefs.

Dec. 2013 – Dec. 2015
Postdoc at the Food Institute, DTU in Denmark. Nutritional epidemiology. Responsible for a large part of the planning of the Diet Survey for infants and young children in Denmark, 2014-15, incl. meeting management. I was project manager for data processing, processing and reporting of parts of the project. Funding for this and other projects.

Oct. 2009 – Sept. 2013 PhD degree in the Department of International and Child Nutrition at the Department of Sports and Nutrition, University of Copenhagen, Denmark. Expertise: Epidemiology and observational studies. The relationship between young children’s growth and nutrition with their body composition at 3 years.

Jan. – Jun. 2009 Nutrition specialist at Egelund Castle. As described in 2016.
