Neel Engholm has been vegan since 2003 and has worked as a chef for just as long. She graduated from Matthew Kenney’s PLANTLAB Culinary School in Los Angeles and Maine, USA, which teaches plant-based gastronomy, and she has worked as a head chef for restaurants in Barcelona, USA, and Denmark. Neel Engholm’s message is that we must remember nature and enjoy all the different ingredients that grow from the fresh soil. We must treat our planet with respect. This is one of the chef’s main sources of inspiration, as well as to pass on recipes that are sustainable and push our environment in a better direction.
